Good question, maybe because some Jews living in the gentile world (the diaspora) were not well versed in Hebrew, and Greek was more widespread. Although most would have memorised the Scriptures in Hebrew and maybe spoke it at home (or Aramaic as the case may be) maybe more could read Greek than Hebrew.

I'll think about it, but that's my gut reaction to your question.
